Carrot cake (or Carrot Cupcakes)

DSC_1560Hedonistin of low budget cooking asked to bake cakes that are “with chocolate, healthy or completely different” for her event “Kleine Kuchen” (“small cakes”). A carrot cake sounds very healthy but if you take a look on the ingredients list you will recognize that this cake belongs in the category “with chocolate”. You can’t taste the carrots but they make the cake wonderful moist.

For my cousins birthday I bake the dough in the muffin pans and top the little cakes with chocolate cream.

The recipe is from “Handbuch für das tägliches Backen” from Pfeifer & Langen in which I wrote the amount of the ingredients for a small springform next to the recipe years ago. Continue reading

Berliner

DSC_1619I like carnival only in very small doses. Because I am working in one of the strongholds of carnival in Rhineland and because I am living in a small town that is as “jeck”  as cologne its impossible for me to avoid carnival and all the drunken people. Drunkard are the most annoying part of carnival for me.  But carnival has a delicious side, too. There are all the baked goodies you can get at this time of the year. I like Berliner, a kind of jelly filled donut, very much. According to Bäcker Süpke there are two possibilities to get delicious Berliner for Rosenmontag: To buy them in the best bakery around or to bake them by yourself. Continue reading

Spelt Oat Whole grain cookies

When I have to stay in lab until late in the evening, I need some carbohydrates somewhere at the late afternoon or early evening to refresh myself. One or two cookies are perfect for that, best with some coffee and a chat with my colleagues.

My favourite cookies are wholegrain, with a lot of oats inside. I love this nutty flavour of oat cookies. When I saw the recipe for digestive biscuits on Swirl & Scramble I knew I had to test it!

I made some minor changes due to my pantry: I used freshly ground spelt and oat, replace brown sugar with raw sugar and add some homemade vanilla sugar. I also add a pinch of salt as I always do when cooking something sweet.

The cookies turned out perfect. So good that I bake the double amount! Continue reading

Pandoro

Pandoro

I tasted Pandoro three years ago when a colleague brought some after visiting her parents in Italy. I fell in love with this rich bread with the feather light crumb immediately. After some Internet search I found a Pandoro recipe from the Simili sisters on Chili und Ciabatta . Its a great recipe I made many times since this day. It is a time consuming recipe but the result is worth every second you spend in kitchen.

And the I saw a sourdough pandoro on Wild Yeast and I knew that this is the bread I have to bake for Christmas.

This pandoro is made with a sweet starter, a sourdough that is feed more frequently for two days to enhance yeast growth. My lovely boyfriend had to do babysitting my sourdough and feed it every four hours while I was working. He did a great job and the starter was vigorous rising after every feeding. On the 23. December I did the dough and the bread rose overnight. My pandoro need about 18 hours to reach the top of the pan and I let it rise the last 4 hours on 30°C! Continue reading

Christstollen

Christstollen After a week with experiments which seemed to fail one after another and long evenings spend in lab to figure out what went wrong, I was not in Christmas mood last weekend. Friday night I leave the lab happy because of one experiment worked at least, but I was so exhausted that even baking seemed to much work on this weekend.

But then I realized that if I want to have a stollen for Christmas that rested at least two weeks (four weeks would be better) I had to bake it now. I had all ingredients on hand, only a recipe was missing. Looking through my bookmarks I found that I bookmarked two different recipe for this year: Dan Lepards recipe for a  extra moist Stollen and the recipe for Thüringer Stollen from Bäcker Süpke.

Chocolate muffins

DSC_0027I bake them rather seldom but this fluffy muffins are a nice snack for a long travel or a delicious treat to share with co-workers. And what I like most about this recipe is the fact that I have to only one dough to get two different kinds of muffins. I would just change one thing next time: I would add some chopped chocolate to the dark muffin variation to make them even more delicious.

Zopf filled with Nuts

nusszopfAfter our lab moved to the new bio center we are now nearly back to everyday life. Some things are not working as they should, but it gets better every day! In our coffee room we miss the new kitchen (it will be delivered later this month) but we have already tables, chairs, and a coffee machine, so we have all things which are essential for a nice break. Thats why I could bring my birthday cake (with a month delay).

The Nusszopf I bake is a very nice pastry, filled with a soft mixture of hazelnuts, caramelle, cinnamon and vanilla. The filling keeps the zopf fresh so its no problem to bake it one day in advance. Continue reading

Choclate Pear Cake

Schoko-Birnen-KuchenI do not bake often cake just for my boyfrind and me, because this means eating days and days the same cake! But since I got a small springform (Diameter: 18 cm) for Christmas last year,I can bake tiny little cakes now which are very fast eaten 😉

Today I bake a Chocolate Pear Cake because I found two very ripe pears in the kitchen. The dough is from “Advanced Bread and Pastry” from Michael Suas, I just cut down the sugar amount and used only baking powder instead of baking powder and baking soda.

To mix first flour and butter and then adding sugar and liquids gradually was new for me, and the dough was very thin, but the cake came out perfectly tender and soft. Continue reading

cream puffs

I do not like frozen cream puffs that you can buy in all supermarkets. They are too sweet and the dough is to soft after defrosting. So I decided today, that I would like to create my own cream puffs . The recipe for  Pâte à Choux is from Michael Suas “Advanced Bread and Pastry”, the filling is the same like the filling of Brioche tropezienne.

The size is the same as from the frozen mini cream puffs. They are perfect snacks with a cup of coffee. Continue reading

Almond Cinnamon Swirl Bread

Mandel Zimt BrotSince last BBD I have a lot sweet breads on my toDo list. Especially raisin cinnamon breads are on top of the list. But raisins are a minor problem here. My boyfrind is sure that raisins are murdered grapes. He always tells me that it is better to eat them fresh. 🙂

So I decided to replace raisins with almonds. The recipe was inspiered by Steve and Sara.

The Bread taste so good! And when I toast it the whole kitchen is filled with cinnamon fragrance. Continue reading
