Curd Ricotta Swirls

Quark-Ricotta-Schnecke (3)For a day trip with my parents I planed to bake something sweet for our picnic. Because my mum suffers from Fructose malabsorption sweet things are always difficult. Fruits are forbidden, as well as anything else that contains high amount of fruit sugar like honey or maple sirup. Even vegetables like tomatos, sweet red pepper and Carrots are bad for her.

So I deciced to to cream cheese swirls for us. But in the supermarket I realise that cream chesse contains carrageen and carobin. I was not sure, if these incredients are allowed, so I buyed ricotta and curd instead. Continue reading

Gaufres de Liège

Lütticher Waffel

Is there anything more delicious then waffles to a cup of coffee? Normaly I bake “Bergische Waffeln”, a round waffle consisting of five hearts which is very common here. But this time I thought about doing a dough with yeast and so I decided to bake Gaufres de Liège. They contain pearlsugar which caramalise during baking. We ate them once in belgium and they are so delicious.

For the dough you need a coarse pearl sugar, but this is not avialable in germany. But there were some sugar cubes from the streuselbatz I bake for Bread baking day left,  so I used them instead. The recipe I found asked for a huge amount of yeast, something I do not like. So I decrease the amount of yeast but allow the dough to rest longer instead and decrease the sugar amount, too.

Baking was very easy and they taste as good as I remeber! Continue reading

Vanillacream Torte

This week it was my Dads birthday, but while the birthday was in the week, so we meet at the weekend for coffee and cake. I promise to bring a cake and after thinking a little bit, I decided to make a Vanillacream-Torte. The making was easy and luckily I took a picture because the summerhot car was not a good for the torte. The chocolade dekor on the top melted and the sides became soft. 🙁 Arriving at my parents place I storm inside without greeting and place the torte in the fridge. This rescued the rest of the torte. Luckily the taste was not harmed 🙂 and I have a picture to proof that once the torte looks nice 😉 Continue reading

Raspberrymousse Torte

My Boyfrind complained some days ago, that I bake always bread, but never a torte. Well, I fear that it’s true because I do not like tortes so much. But I own a tiny little springform with a diameter of 18 cm since Chrismas (Thanks Erika and Alwins :-D), a perfekt Size for a small torte for two.

And because I was looking for something for the Jubiläums-Blogevent from Zora (1x umrühren bitte), I could hit two birds with one stone.

Brownies

Another collegue finished her PhD thesis, and today was the great day of her disputation. It is a custom at our university that the new Doctor get a selfmade Doctor-hat, a Doctor-wagon and a Doctor-cake. So I was asked if I could bring a cake, a question I will always answer with yes 😉

For the last two disputations I do Schweizer Rüblikuchen, something that is very delicious, but I thought it would be not very creativ to bake it a third time. Filing through my recipes at Chefkoch.de I found a recipe for Brownies.

Containing a lot of sugar and cacao you get nearly a sugar-shock when you eat more than a tiny bite, so it is really perfect for my lab mates 😉

The Recipe is very easy, so its perfect, if you come home from work late in the evening (like me in the last weeks). The decorations I did this mornig at work together with a collegue. Continue reading

Rohrnudeln

After my Bread baking Adventure I did not bake at this weekend because the freezer was filled with bread.

But today I came home earlier so I had some time to do a more complicated dinner then usual. I like Rohrnudeln very much, with a soup as a starter they are my favorite sweet maindish, so I decided that it was time to bake them again.

Colombina

I learned two years ago, that there exist a Easterbread called Colomba, when my italian collegue brought one from Italy after easter holidays with her parents. With this incredibly soft texture of the crumb unter a sugar crust it was one of the delicouse things I ever tested. To sad that my collegue did not bake at all, so she had no recipe for me.

But from that point on I wish to bake a colomba. But I learned very fast, that it is nearly impossible to get a colomba papermold in Germany (and i do not plan to buy 100 papermolds, just for baking one or two colombas per year) Continue reading

Brioche Tropézienne

I planed to bake brioche since months. In my new favorite baking book “Advanced Bread and Pastry” I found three diffrent recipes, using no preferment, sponge or prefermented dough. I liked the sponge most because I had not to rember to put the dough into the fridge after one hour.

While filing through the diffrent recipes I found the shaping option Brioche Tropézienne. These Brioche filled with Vanillacream and with streusel topping sounds perfect for my mums birthday. So I decided to do half of the Brioche as Brioche Tropézienne.

The look of the Brioche Tropézienne turned out not as nice as I expected. Part of the streusel topping slipped of the top. Maybe because I do not bake it in small round pans  like the recipe asked for. Maybe that is a good argument for buying a muffinform, because nevertheless they taste great! Continue reading

Chocolate custard muffins

I planned to try a chocolate soufflé this weekend, but I catched a mean cold (again). So I spend the whole saturday in bed, and sunday i was better, but not well enough for kitchen experiments. So I postpone the soufflé to the next weekend and choose a simple recipe instead.

I want to try the chocolate custard muffins from Dan Lepard for a long time. I just had no neutral oil, so I exchanged the oil for butter. But that did not spoil the result, the muffins are very fluffy.
