Schwarzwälder Kirschcreme

Schwarzwälder KirschcremeA dessert made with curd (Quark) is always  delicious and a good dessert for  a potluck barbecue. The Schwarzwälder Kirschcreme I made for a barbecue at my colleagues home is a variation of the Schwarzwälder Kirschcreme a former Ph.d. student of us loved to make for those occasions.

I refined the cream with some vanilla and mix some Gianduja chocolate with the semisweet chocolate. Before I grate the chocolate with a slicer I froze them for a while to make the grating easier and forms nice little chocolate curls then.

I layered the dessert in small glasses, but it looks great in a big bowl, too.

With a decoration of  some fresh cherries and a little bit of cream makes the dessert to a beautiful eyecatcher.

Sour cream – Curd Ice cream with Raspberries

The last days were really warm and humid – it seems like summer is already here. And so it is time to start the ice cream season.

In the lab we did already the first ice cream of summer, our favourite lemon yoghurt ice cream.

After we spend a lot of time in a hot train on our way home after work, the boyfriend and me needed something to cool down again. And so I inspected the content of the fridge and decided to prepare a sour cream – curd ice cream with raspberries.

I like this kind of fruit ice creams at hot days very much.

This recipe is easy to prepare and delicious creamy, with potential as favourite ice cream of the summer

Apple casserole with rolled oat topping

ApfelauflaufIn Germany we had a lot of sun at the end of September to balance the wet and cold summer. The last warm days made the apples on my parents apple tree delicious sweet. But with the begin of October the weather changed to “real” autumn with 10°C as highest temperature, rain and storm.

I was longing for something sweet and warm for dessert to warm me from inside. Something sweet made with the delicious hand picked apples. I longed for the sweedish apple casserole topped with thin-rolled oats. A colleague of mine baked it for her birthday last winter – but forget to give the recipe to me until now.

And so I made the crust like I thought it would work.

And it taste good – who needs a recipe?

Pavlova

PavlovaWhy did I wait so long until I tried this recipe? I don’t know! It is a simple recipe with three components that promise dessert heaven on earth: Meringue, cream and fresh fruits. And like Eton Mess  the magic of pavlova consists of this mixture of crunchy and soft, sweet and sour and this made the dessert irresistible.

I saw Pavlovas on many food blogs before: Claudia bake them, and Paule, Nicky and Barbara made them some time ago, too. And every time I read one of their posts I thought: I have to try this! But I didn’t do it until this weekend. When we bought some delicious berries (strawberries, blueberries and raspberries) I decided that they would be great for a pavlova.

I like the miniature version of the dessert that Claudia bake and so I decided to do single portion pavlovas with a diameter of only 10 cm and a little pit in the middle to keep the cream.

The recipe is really simple only waiting for the meringue to bake/dry takes some time. And you will be rewarded with a delicious dessert for your patient waiting! A great recipe for the summer!

Egg liqueur Mousse

Eierlikör-MousseFor me it is not so easy to find of a dessert without Fructose (fruits, lots of vegetables),  Histamine (nuts, chocolate) and Lactose (dairy). The things that come to my mind are (vanilla) ice cream and panna cotta, both made with lactose free products.  But I always like to bring something especially delicious for my mum when we meet for occasions like Christmas or new years eve. Something she likes very much, something that make she forget all of the troubles cooking means for her. And so I keep looking for new Ideas.

Chocolate Custard

After Christmas I start normally with checking my pantry and fridge. We spent the holiday at our parents homes and at a huge family get-togther and everywhere we get delicious lunches and dinners so my fridge was nearly empty. But I found a bottle of milk which was a little bit over the date of expiry. I want to use the milk before it goes bad. So I used half of it for confiture de lait but for the other half I had another plan.

Since beginning of December there was a Chocolate Santa standing in the living room and no one wanted to eat him because the chocolate was a cheap quality. And what is the traditional fate of not eaten Chocolate Santas (or easter bunnies)? Right, put them in some chocolate custard. Continue reading

Apfelküchle

Apfelküchle We still have plenty of apples so there will be a lot of recipes with apple in the next weeks for sure. We finished this years apple harvest. We picked all apples we could reach with ladder and apple picker, but there are still apples left on the highest branches.

Because we picked about 100kg apples this time we brought most of it to our local cider mill. There you can trade your apples for juice. For 100kg apples you get about 12 bottles apple juice.

But the most beautiful apples we place in baskets and store them in the attic. They will keep at least for a month or so, but this is a sort that can not stored for month like others. So eating and preserving apples is the order of the day. Continue reading

Raspberry curd cream

Himbeerschicht-Speise When Zorra asked me to host 57. Blogevent I knew really soon that the topic would be “Food to take away”. I take always some lunch snack to work because I do not like the meals in our cafeteria. Most of the time it is a sandwich of homemade bread with cheese, lettuce and tomatoes, sometime its a leftover from last nights dinner. Rarely I prepare something more complicated at the weekend like little pizza snacks (I realize that I did not post them until yet!).

I love a nice picnic, too but we do this rather seldom. But now the rainy may has gone and June started with sunshine and warm weather. So its time to pack our picnic basket and find a nice spot outside!

Coffee Caramel Icecream

DSC00494It is a kind of tradition now: once a week we make some icecream at work. When the lab heat up to 30°C and water condens on tubes at the ciceling to fall down on my head, it is a little treat for us to stay motivated!

This week we did a Coffee-Caramel-Icecream, and we had to be creative, because a coffeeroom did not provide the same things then a kitchen. We have no espressomaschine, so we have to make coffee with our senseo.

But the ice cream was great. It has  a strong coffetaste with a hint of caramel. Continue reading

Cold Coffee extract

EiskaffeeDeb from Smitten kitchen posted last year about cold-brewed coffee. I read the post just now, and was fascinated. It sounds so simple, mix grounded coffee with cold water, let sit over night and then strain. And it should taste less bitter and sour then cooked coffee that cooled down. That sounds very promisinig to me.

I love trying new recipe and I love coffee, so I walk in the kitchen direktly  and mix water and grounded coffee. The next day I strained the coffee and fill a glas with homemade vanilla icecream and coffeextract. I ignored the part in the recipe saying mix extract with equal amount of water or milk because I like this espressolike taste of the extract very much.

Then I taste and now I can tell: Deb is right! It is the best Icecoffee i ever made! Continue reading
