Raspberry Scones

Himbeer-SconesWe were invited to a Brunch on Saturday. And because I don’t like to go to an invitation without offering to contribute something to eat I asked the hostess if she need something. She told me that something sweet would be nice and so I decided to bake Raspberry Scones.

I saw a recipe for blueberry scones at Seelenwerk and the pictures Mila take were so mouthwatering. The recipe is from” Baking with Leila” from Leila Lindholm and this is a cookbook I own, too! It never tempted me so much but when I read the recipe in the book. Its good that we have blogs, too!

The original recipe asked for grated lemon peel and blueberries but I was in the mood for raspberries and so I decided to replace the blueberries with frozen raspberries and lemon peel with orange peel.

The dough is easy to prepare and the scones are fast to prepare and fast to bake.

It was the first time I bake scones and I am very pleased with the result. A recipe I will bake again for sure!

Wedding cake for my little Sister

My little sister married end of april. And to my great joy she asked me if I would bake the wedding cake.

After talking a little bit with her and my (then still future) brother in law we decided that I bake a three tired wedding cake consisting of a raspberry white chocolate torte (28 cm diameter), a Sachertorte (24 cm diameter) and a lactoste free vanilla cream torte (18 cm diameter).

I calculated that I would need two days to make the cake: one for baking the raspberry white chocolate torte and the vanilla cream torte and one for decoration. Our Mum baked the Sachertorte after the recipe of Oma Bucholtz (fund at Schnuppschüss) 10 days before the wedding because this cake needs a long rest before serving.

Cream puffs with raspberry cream filling

Windbeutel mit Himbeer-SahneA colleague of mine served at her birthday delicious cream puffs filled with raspberries. When she told me the recipe of the filling I realized that it is so simple that I did not need to write it down: Mashed raspberries folded under whipped cream.

On last Sunday afternoon I longed for a cup of coffee with some sweet treat. Luckily I found some frozen raspberries so I could bake some cream puffs with raspberry filling.

I posted the recipe for pâte a choux before and baked it since then often. This time I decided to bake the cream puffs a little bit bigger so I baked them a for a longer time.

Something I learned since I baked cream puffs for the first time is that the convection mode in the oven is really helpfull, especially when you open the oven a little bit to early and the puffs start to collapse. Then close the door  fast and switch on convection mode. That let them puff again and saved on of my batches! Continue reading

Wedding Cake

When my cousin told in august that she would marry in October I offered happily that I could bake the wedding cake. Maybe I was jumping up and down and asked “Can I bake the cake, can I bake the cake”, too.

Groom and Bride like the Idea and so I started to search the web for Inspiration. Finding a cake topper that fits in the budget was not easy. I liked a stylized Couple in white but this was to modern for my cousin and her fiancé. They wished for something more romantic. So I search the web for inspiration and fell in love with this cake. But for this cake I had to do the Cake Topper by myself. So I bough Polymer clay and start to model a wedding couple. This was easier then I thought.

White Chocolate-Mousse Torte with raspberry filling

I planned to bake a special cake for my dad’s birthday. In Michaels Suas’ “Advanced Bread and Pastry” I found a recipe for a White Chocolate-Mousse Torte with raspberry filling. That sounded perfect for this hot and sunny Summer afternoon. The recipe sounds a little bit complicated but the sponge and the raspberry filling can be prepared in advance. And it is really helpful to have an empty dishwasher, so you can put away all the bowls you will need while preparing the torte.

Raspberry curd cream

Himbeerschicht-Speise When Zorra asked me to host 57. Blogevent I knew really soon that the topic would be “Food to take away”. I take always some lunch snack to work because I do not like the meals in our cafeteria. Most of the time it is a sandwich of homemade bread with cheese, lettuce and tomatoes, sometime its a leftover from last nights dinner. Rarely I prepare something more complicated at the weekend like little pizza snacks (I realize that I did not post them until yet!).

I love a nice picnic, too but we do this rather seldom. But now the rainy may has gone and June started with sunshine and warm weather. So its time to pack our picnic basket and find a nice spot outside!
