Christmassy almond cloud

MandelwolkeThe last Bread Baking  Day of the year 2012 has the theme “X-mas Edition” and is hosted at Cindystar. I get the idea for a bread fitting to this theme some days ago, when I was on my way back home from work. It was already very late, I had lunch about 7 hours ago and I was hungry. So I stopped at the bakery in railway station and bought a bun called “Little cinnamon almond cloud”. That sounds good, doesn’t it? But when I take the first bite I was disappointed. The bun was not stuffed with crunchy almond pieces but with very sweet marzipan in a very sweet dough overpowering completely the faint cinnamon taste. Not what I expected when I read the beautiful name!

When I was sitting in the train I started to think about how I would do such a kind of bread. And so I used the time to develop a recipe for a sweet bread seasoned with cardamom, Cassia buds and allspice and enriched crunchy almond pieces. Its a rich bread with a lot of egg and butter and its perfect for breakfast on Christmas mornings. I achieved a cloud like look with dusting the bread thickly with powdered sugar baking.

Quince-Almond-Braid

Quitten-Mandel-ZopfIts nearly two weeks ago that I posted a recipe! At the moment my work is once again consuming most of my time, but hopefully this part of my Ph.d. thesis will be finished successfully in soon future. I will tell you more about it then.

The bad thing with stressful days is that it makes me always susceptible for colds. After I had a really bad at the beginning of October the second cold for this month sent me last week straight to my bed again. I drank a lot of tea, eats a lot of vitamins and now the fever is gone. I am just still very hoarse and coughing badly.

But I am fit enough once again for reading blogs and for baking. Paule baked Quitten-Schuedi this weekend, a cake with yeast dough and quince sauce. I liked the Idea of using some of last years quince sauce I had still in the freezer. I need new space to freeze my share of quince from my parents garden that at the moment is still waiting in a small laundry basket in my kitchen. Continue reading

Bienenstich

BienenstichSome weeks ago I promised my sisters fiancée to bake some Bienenstich (Bee sting) when we meet to drink coffee in their new house. But then I was busy in the lab and so I bake fast and easy nut triangles instead. The next time we planned to meet for cake and coffee I was ill and bake nothing at all. But when I was thinking about what to bake for my mums birthday last week the promised Bienenstich seemed to be perfect.

Bienenstich is a traditional german yeast cake topped with a crunchy almond layer and filled with a  vanilla pastry cream

Because I like the taste that Pâte fermentée adds to a sweet yeasted dough I decided to vary my old recipe. And because my kitchen machine does not work so nice with small amounts of dough (everything less then 500g flour ) I decided to knead the dough completely by hand. That was a little bit difficult because the dough is very soft and tend to stick to hands and counter. But it is good to resist the temptation of adding more flour because the softness of the dough will result in a fluffy and soft cake. Continue reading

Fruitbread

Früchtebrot(2)I planned to bake “Kletzenbrot” this year. Kletzenbrot is named after the Kletzen which are added to the dough and this Kletzen are dried pears. But then I remembered that I have to big glasses filled with dried apples in the pantry because this autumn  I dried a lot of the apples we harvest. (I mentioned before that we harvest lots and lots of apples this year, didn’t I?)

So I decided to use some of this dried apples in the bread instead of dried pears. And so I call it Fruit bread and not Kletzenbrot.  The dough I used is a simple bread dough with sourdough. The sweet of this bread comes from the added fruits and nuts. It tastes most delicious cut in very thin slices and spread with some butter. It is my favorite bread for breakfast at the moment and it keeps fresh for a long time because of the fruits and the sourdough.

Thüringer Spitzbuben

Thüringer SpitzbubenI tested already some new christmas cookie recipe this year but not one was as good as the ones I bake every year during my christmas baking. But this weekend I came across the recipe for “Thüringer Spitzbuben”. The name Spitzbube left me puzzled because I knew the term Spitzbube as an alias for Linzer Cookies, the delicous cookies filled with red currant jelly.

But the “Thüringer Spitzbuben” are not filled with some jelly, instead an almond is pressed in the middle of the cookie and glazed with some egg yolk. The dough is seasoned with cacao and cinnamon and smells irresistible during baking.

It has no similarity to his namesake but it taste delicious. I like the combination of almonds, cacao and cinnamon very much and so there is a good chance that this recipe will be added to the recipes I bake every year. Continue reading

Apple cake Elfriede

Apfelkuchen ElfriedeWhen I saw Petras Apple Cake Elfriede this weekend I knew that I had to try this recipe. The picture of the cake looked so delicious.

Of course I change some small details of the recipe. For the nut cream I used almonds and no walnuts or hazelnuts like the recipe requested. I like to use the same nuts as I used in the crust so almonds were my first choice. The second change is caused by the fact that I read the recipe not attentively enough. So I mixed the cookie crumbles with the nut cream instead of sprinkle them on the top of the cream.

Its a really delicious apple cake which I can strongly recommend. I like that it is filled with lots of apples and the nut cream adds a delicious flavour to the cake. Only the crust could be a little bit more crispy for me. The next time I do it I will replace half of the honey with sugar hoping that this will make the crust crunchy.

Mandelstuten – sweet almond bread for BBD#31

MandelstutenLast Weekend I saw a Mandelstuten – a sweet bread with almonds – at our local baker. But while I love to eat breakfast in the Café that belongs to the bakery, I nearly never buy bread there. I prefer to bake it at my own. But I make for my own: Bake Mandelstuten! And when I read the anouncement for 31. Bread baking day it felt as if Zorra from 1x umrühren bitte read my mind. The Theme she choose for the 3rd anniversary is Bread with nuts. Isn’t this perfect?

When I tried to decide which dough I should use as a basic for the Mandelstuten Paules post reminds me of the Hokkaido Milk Bread. This recipe use cream instead of oil or butter and I liked the idea to create a dough similar to the Milk bread. I included a preferment and add more cream to the dough and removed milk powder from the formula. And because the Mandelstuten at the bakery was braided and then baked in a bread pan so I braided my bread, too.

Granola Bars

Last week Steph of Kleiner Kuriositätenladen baked granola bars for the Blogevent “Essen für Unterwegs” (which I hosted this month). Her recipe contains cranberries but no nuts. I wanted my own granola bars, but I wanted something with nuts, something with almonds and apricots.

So I did a research at Tastespotting and after reading some recipes I had a plan. I combined details of different recipes: oat meal, rolled oats, almonds, apricots, some seeds. Then I add some egg white to the mixture to improve the texture.

Almond Cinnamon Swirl Bread

Mandel Zimt BrotSince last BBD I have a lot sweet breads on my toDo list. Especially raisin cinnamon breads are on top of the list. But raisins are a minor problem here. My boyfrind is sure that raisins are murdered grapes. He always tells me that it is better to eat them fresh. 🙂

So I decided to replace raisins with almonds. The recipe was inspiered by Steve and Sara.

The Bread taste so good! And when I toast it the whole kitchen is filled with cinnamon fragrance. Continue reading
