Schokoladen-Gugelhupf

Gugelhupf

It is done! Not my Ph.D. Thesis – I am still working on that – but the Paper to my side project is published. When I am thinking that this was “only” my side project, its amazing how often it played the chief part in the last  two years . After some rejections is finally accepted and now I can use all of my energy to finish my main project. When everything works as planned I will end the experimental part of my thesis end of this month and will start writing. That is the plan I have at monent … we will see what will happen. Life in lab is never easy to plan…

Orange flavoured Hot Chocolate Mix

Orangentrinkschokolade A homemade Hot Chocolate Mix is a simple but delicious little Christmas gift. In the cookbook “Süße Geschenke aus der Küche: Leckereien backen und verpacken” I found not only nice recipes like a Hot Chocolate Mix flavoured with cinnamon and cardamom but also great Ideas for beautiful decorated glasses, bags and boxes. After I prepared the “normal” Hot Chocolate Mix, which I liked very much, too, I started to experiment with the recipe to create a orange flavoured mix.

I had this idea because some of my colleagues like an orange flavoured cacao from Quai Sud very much to flavour their coffee with it. But this cacao is expensive and hard to get. So I thought a homemade hot chocolate mix would be a great Christmas gift for them.

The best way to get the orange flavour into the chocolate mix is to grated a lot of orange peel, dry it in the oven and ground it together with sugar in a food processor.

I like the taste of the orange flavoured hot chocolate mix very much – I hope that my colleagues like them, too.

Wedding cake for my little Sister

My little sister married end of april. And to my great joy she asked me if I would bake the wedding cake.

After talking a little bit with her and my (then still future) brother in law we decided that I bake a three tired wedding cake consisting of a raspberry white chocolate torte (28 cm diameter), a Sachertorte (24 cm diameter) and a lactoste free vanilla cream torte (18 cm diameter).

I calculated that I would need two days to make the cake: one for baking the raspberry white chocolate torte and the vanilla cream torte and one for decoration. Our Mum baked the Sachertorte after the recipe of Oma Bucholtz (fund at Schnuppschüss) 10 days before the wedding because this cake needs a long rest before serving.

Chocolate Custard

After Christmas I start normally with checking my pantry and fridge. We spent the holiday at our parents homes and at a huge family get-togther and everywhere we get delicious lunches and dinners so my fridge was nearly empty. But I found a bottle of milk which was a little bit over the date of expiry. I want to use the milk before it goes bad. So I used half of it for confiture de lait but for the other half I had another plan.

Since beginning of December there was a Chocolate Santa standing in the living room and no one wanted to eat him because the chocolate was a cheap quality. And what is the traditional fate of not eaten Chocolate Santas (or easter bunnies)? Right, put them in some chocolate custard. Continue reading

Black and white Kisses

Schwarz-Weiße KüsschenWhen I saw the Black&White Kisses from foodmayhem at Tastespotting  I fall in love with this little meringue puffs. I had to bake them directly! And because I planned to bake linzer cookies I used half of the dough for the kisses instead.  And some left over egg white I always found in my kitchen during Christmas baking.

I use all my left over chocolate which I grind finely. I used about three times of the chocolate amount the recipe ask for.

To make the cookies lactose free I prepared the dough with margarine.

The small kisses are beautiful, delicious and easy to do. I like the feeling when the kisses melt in the mouth. Chocolate and meringue are a perfect couple. Another new Christmas favourite. Continue reading

Chocolate swirl bread

At Happy Home Baker, the source for the in german blogs so famous hokkaido milk bread, I found this beautiful bread with a zebra pattern.

I baked it already two weeks ago but having a busy time in lab (again) I had no time to post it. I hope I post it now in time for yeastspotting.

The bread has the same wonderful soft crumb as his famous cousin hokkaido milkbread. To achive a cotton soft structure I used water roux. Water roux is a mixture that contains of 1 part flour and 5 parts water and which is heated to 65°C. It cause the starch to gelatinization, so it binds more water, which make the bread softer and fluffier and enhanced the shelf life.

The bread is very delicious with a bittersweet chocolate taste. It tastes delicious on his own but with a slightly sour marmalade like red currant it tastes even better.

Carrot cake (or Carrot Cupcakes)

DSC_1560Hedonistin of low budget cooking asked to bake cakes that are “with chocolate, healthy or completely different” for her event “Kleine Kuchen” (“small cakes”). A carrot cake sounds very healthy but if you take a look on the ingredients list you will recognize that this cake belongs in the category “with chocolate”. You can’t taste the carrots but they make the cake wonderful moist.

For my cousins birthday I bake the dough in the muffin pans and top the little cakes with chocolate cream.

The recipe is from “Handbuch für das tägliches Backen” from Pfeifer & Langen in which I wrote the amount of the ingredients for a small springform next to the recipe years ago. Continue reading

Chocolate muffins

DSC_0027I bake them rather seldom but this fluffy muffins are a nice snack for a long travel or a delicious treat to share with co-workers. And what I like most about this recipe is the fact that I have to only one dough to get two different kinds of muffins. I would just change one thing next time: I would add some chopped chocolate to the dark muffin variation to make them even more delicious.
