At winter mornings when one look out of the window make me shiver I need something warm and filling before I go out in the dark and cold morning to catch my train. A porridge made with rolled oats is easily made and a favourite winter breakfast since my childhood. Sometimes I buy a rolled grain mix instead of rolled oats to have a variation for breakfast. This grain mix contains rolled oats, wheat, barley, rye and spelt and is very delicious.

One morning I decided that I could add some porridge into a bread dough, too. And so I made some overnight rolls with rolled grains and porridge. The roll stay nicely moist but the dough was easily to handle, too.

For baking the rolls I used the same trick as for my “normal” rolls: I placed the rolls together with a small oven proof bowl on a baking tray, filled the bowl with boiling water and covered them with a second baking tray. The steam is trapped between the baking sheets what improved the oven spring quite nicely. It is similar to baking a bread in a dutch oven. After half of the baking time I removed the cover and the bowl.

With this trick the rolls turned out great. A soft crumb with a crunchy crust, a complex flavour due to the long rise over night which underlines the nutty taste of the rolled grains.

Crispy Bran Rolls

Kleie-KnusperchenWhen I tidied my storage cupboard some days ago, I found a bag with oat bran, something I bought a while ago for baking. But then it disappeared behind some flour bags and I forgot about it. Out of sight, out of mind! But after I rediscovered them I wanted to use them as soon as possible. And so I thought about a recipe for our Sunday morning rolls which includes some oat bran.

Because I love yoghurt in bread so much and also because I had some yoghurt left, I decided to put it into the dough, too.

When I formed the rolls I had a flash of creativity and decided to fold the tips of the quadrat to the middle. During the baking they partly unfold, forming a lot of crispy crust. The bran I sprinkle over the rolls enhanced their crispiness, too.

I’m quite happy with them, they are soft inside but crispy outside. Just what I like for a breakfast roll.

Christmas Tree Bread

Today I post the Bread we had for Dinner at the holy night, as I promised yesterday.

I like pull apart breads, like the “Brötchenkranz”, a typical german way to serve rolls at parties. When I saw a Christmas tree shaped “Brötchenkranz” I fell in love with it immediately. Sadly, I cannot remember anymore where I saw it the first time. I thought that it was yeastspotted, but I could not find it there. The Google picture search shows me a lot of baked Christmas trees.

Which was my original Inspiration? I can’t tell.

As dough I choosed an overnight recipe, which I could shape and bake in the morning of December, 24th. The Rolls had a nicely soft and fluffy crumb and a complex taste due to the long rise.

Bread Baking Day #54–Round up

When I announced BBD#54, I was so curios about the “Overnight”-Recipes. But then I had to wait … more or less patiently. It is so strange – I have a lot of patient when it  comes to bread baking – mixing a starter, let it develop, mix the dough, let it rise (probably overnight), baking it and then wait until the bread is cooled before slicing, that needs a lot of patiently waiting. But when I’m waiting for something to happen, like for the results of some very fascinating experiments in the lab or waiting for the entries for BBD, it is so hard to lean back and relax.

And so I’m very happy and exited that I can present you now all this great breads and rolls! We have sixteen entries from Thailand /Holland, Germany, Belgium, Canada, Sweden, Italy, Brazil, Spain, USA and Austria.

I tried to leave a comment at each post, but at one or two it was not possible because I lack the right type of account. So let me tell you here again that you all did a great job and that I enjoyed hosting this Bread Baking Day very much! The next BBD is hosted by Katha from Katha-kocht! and she will announce the theme at 6.December.

Bread Baking Day #54: “Overnight”

breadbakingday54It’s been three years ago that I hosted Bread Baking Day, a  blog event which was created by Zorra about five years ago, and we had a great round-up with 48 delicious Sweet Breads. And here I am again, honoured to be hostess of Bread Baking Day #54, too!

After Zorra presented us  a great round-up with 342 breads from all over the world at the World Bread Day 2012 last month, it was time for me to think about a theme for Bread Baking Day in november. And while last time I needed to think a while to find the right theme, this time it was very easy for me . During the last – often very busy – year, I became a big fan of overnight recipes. There are so many possibilities to make overnight breads or rolls!  And so I decided it would be great to use BBD to gather ideas for overnight breads and rolls.

And so the theme of this month BBD is “Overnight”! You could proof your dough or the loaves and rolls in the fridge or even at room temperature.  Play around with a recipe you like and converted it in a overnight version or test something completely new. I’m very curios about your creations!

Windfall Bread

Fallobst-BrotWhen Martin presented his Windfall Bread with grated apples I knew that this is a recipe I had to test. And when I looked in the basket with windfall from my parents garden I saw some quinces which looked like they had to be used up quickly.  And so I but some grated quinces in the in the bread dough, too.

The bread is really great with a moist and soft crumb and a hint of sweetness due to the fruits.

Potato rolls with Lievito Madre

Kartoffelbrötchen Summer holidays are the time in the year when we eat a lot of rolls. Rolls are the most important component for our relaxed breakfast on sunny (or rainy) summer mornings. And when our holiday home kitchen has a real oven, the rolls for breakfast are of course homemade. I love to test new recipes during this summer times.

And what are better recipes for holidays then overnight recipes? And so I played around with the Lievito madre. To prevent the dough of getting to sour, I reduced the amount of the preferment. That resulted in a slightly sour taste which fits nicely to the mashed potatoes and creme fraiche I added to the dough, too. The potatoes and creme fraiche creates a soft and fluffy crumb, and keep the crust a little bit lesser crisp then of other rolls, but I like them like that. They taste just great!

Müsli Rolls

For a relaxed breakfast with my sister I planed to bake some rolls. The day before I came home from work lately. It was maybe the only week of “real” (hot) summer we get this year in Germany, and so I decided to enjoy the good weather as much as possible and go swimming first. When I came home I was to tired for long kneading and make some overnight rolls.

As basic I used my all time favourite Recipe for Yoghurt Sesam Rolls, but this time with some whole rye flour and additional Müsli mix. The Müsli is a homemade mixtrue containing rolled oats and barley, raisin, dried apples, sunflower seeds, a lot of chopped almonds and sesame and flax seeds.

I let the dough rise overnight and early in the next morning I formed and baked the rolls, refreshed after some hours of sleep.

And later that day we enjoyed the rolls. They have a crust, which stays a little bit soft – just as my sister like her rolls – and a soft crumb. The overnight fermentation gave them a complex flavour and yoghurt adds some tartness. The perfect roll for sweet marmalade or honey, but great with cheese, too.

Malt beer knots

Malzbierknoten I’m not a huge beer fan. Seldomly, maybe one or twice a year, I like to have a little bit beer. That happens normally when we are in Belgium and then I prefer some beer from a small (family-) brewery like Brugse Zot. I don’t like Kölsch, a beer that is typical for the region I’m living, and the same is true for Pils, too.

That is not the best starting point to bake a Bread with Beer for the 5. Birthday of Bread Baking Day. I tried it anyway, but was not convinced of the taste of the bread I baked. And so I decided to cheat a little bit and bake some rolls made with malt beer. I used a local brand “Golden Malz” which is produced in a brewery only 9 km from where I live. It is a real piece of home.

The malt beer knots turned out great. Their taste has deep, malty nuance which fits nicely to the nutty taste of the fresh milled wheat in the rolls and the complex aromas which are created during the slow fermentation. The crumb is soft and fluffy and gets a nice light brown hue due to the malt and the crust is crunchy. A good tasting bread for sweet honey or  jam but great with cheese, too

Bergische Knüppel – Overnight variation

Bergische Knüppel ÜbernachtThe delicious Knüppel are great as Overnight variation, too.  Kornblumeasked me how to change the recipe so that the dough could ferment overnight and together we developed the overnight variation. And during thinking about it I decided that I would try them, too.

Similar to the Krustis, the dough fermeted slowly overnight and at the next morning I only had to form and bake the rolls. The short proofing (only 30 minutes) helps to get fresh rolls on the breakfast table fastly.

The long fermentation creates more complex aroma then in my first Bergische Knüppel recipe. They had again a great ovenspring, the crust was crisp and crackle during cooling down. The crumb was again niecly soft and fluffy.

I am glad I tried them as overnight roll, too!
